Delicious Soy Milk Muffin Recipe

SOY MILK MUFFINS/ Makes 7 lb 8 oz
Ingredients
- 2lb 8 oz pastry flour
- 1 lb 4 oz sugar
- 2.5 oz baking powder
- o.5 oz salt
- 12 oz eggs, beaten
- 1 lb 12 oz soy milk
- 1 oz vanilla extract
- 1 lb melted butter or shortening
- Sift together the dry ingredients
- Combine all liquid ingredients, including melted fat or oil
- Add the liquids to the dry ingredients and mix just until all the flour is moistened. The batter will look lumpy. Do not overmix.
- Pan and bake immediately.
- Bake at 400 degrees F. For about 20 minutes
